Shepherd’s pie – Serves 4
2 tbsp olive oil
Sea salt and freshly ground black pepper
1 lb ground meat (venison or beef)
1 large onion, finely grated
1 large carrot, finely grated
8 oz mushrooms, finely chopped
½ cup chopped peppers
2 cloves garlic
1-2 tbsp Worcestershire sauce
1 tbsp tomato paste
1 tsp thyme
½ tsp of rosemary
1 cup red wine
1 cup chicken stock
2 lbs potatoes, peeled and cut into chunks (4 large ones)
2 egg yolks
Parmesan, for grating
Sea salt & freshly ground black pepper
1. Preheat the oven to 375.
2. Heat the oil in a large pan until hot. Season the meat with salt and pepper and fry in the oil over moderate to high heat for 2-3 minutes. Stir the mushrooms, peppers, onions and carrot into the meat then grate/press the garlic in as well. Add the Worcestershire sauce, tomato puree and herbs and cook for 1-2 minutes, stirring constantly. Pour in the red wine and reduce until almost completely evaporated. Add the chicken stock, bring to a boil and simmer until the sauce has thickened
3. Meanwhile, cook the potatoes in boiling salted water until tender. Drain, then return to the hot pan over low heat to dry out briefly. Mash them well then beat in the egg yolks, followed by about 2 tbsp grated Parmesan.
4. Spoon the meat mixture into the bottom of a deep 9” pie plate. Using a large spoon, layer the mashed potato generously on top of the meat mixture, starting from the outside and working your way into the middle. Grate some extra Parmesan over and season. Fluff up the mash potato with a fork to make rough peaks. Bake in the oven for approximately 25 minutes, until bubbling and golden brown
Wild Rice Vegetable Bake serves 6-8
1 cup wild rice
Rinse in cold water and strain through fin mesh strainer. Boil gently in 4 cups of water 10 minutes. Drain.
2 cups onion (chopped)
Saute in 2 TB olive oil.
1 cup pearl barley
Place with onions and wild rice in large casserole dish or 9X13 inch baking pan. Stir.
2 cups each yams, winter squash, parsnips (peeled and cut in 1-inch pieces)
1 pound mushrooms (optional)
Spread on top of grains. Sprinkle with salt and pepper.
1 cup cider or apple juice
3 cups chicken or vegetable broth
Pour on top. Cover tightly with lid or aluminum foil. Bake 375F for 1 hour.
